Easy chocolate mayonnaise cake

This impressive chocolate cake is super-moist thanks to a good dollop of Le Mesurier Classic Mayonnaise. What's more, it's prepared in just 10 minutes!


  • 285 g self raising flour
  • 225 g sugar
  • 1.5 tsp baking powder
  • 200 g Le Mesurier Classic Mayonnaise
  • 4 tbsp cocoa powder
  • 237 ml boiling water
  • 1 tsp vanilla essence
  • 1 tub chocolate fondant (or make your own using 50g softened butter, 45g cocoa, 75ml milk, 450g icing sugar. Beat butter and cocoa until combined. Add milk and vanilla; beat until smooth. Gradually beat in icing sugar until desired consistency is reached).


  1. Preheat the oven to 180oC/350oF/ Gas Mark 4 and grease and line a loose bottomed cake tin.
  2. Mix the flour, sugar, baking powder and Le Mesurier Mayonnaise together with an electric mixer.
  3. Dissolve the cocoa in the boiling water and stir into the mixture along with the vanilla essence.
  4. Bake in the oven for 30 to 35 minutes, then allow to cool in the tin before removing.
  5. Ice with the frosting before slicing and serving.
